Step 1: Choosing Your Beans

Selecting the right beans is where the journey begins. Opt for a variety of single-origin beans, each representing different coffee-growing regions. Whether it's the bright acidity of Kenyan AA or the earthy richness of Sumatra Mandheling, variety is key.

Step 2: Gathering Equipment

You'll need a few essentials:

  • Freshly roasted coffee beans
  • A grinder
  • Cups (preferably without any strong odors)
  • A scale
  • Hot water just off the boil
  • Spoons for stirring
  • A timer
  • Pen and paper for notes

Step 3: Grind and Smell

Grind your beans to a medium-coarse consistency. As the grounds meet the air, close your eyes and take a deep inhale. Notice the initial aromas – they hint at the flavours that will soon dance on your palate.

Step 4: The Pour

In each cup, place 2 tablespoons of coffee grounds. Slowly pour hot water over the grounds in a circular motion, ensuring all grounds are saturated. Allow the crust to form by letting the coffee steep for about 4 minutes.

As the crust forms, lean in and inhale deeply. Break the crust gently with a spoon and continue inhaling. The aromas released now are a concentrated version of what you'll taste shortly.

With the crust removed, note the aromas. Are they floral, fruity, earthy, or perhaps nutty? Write down your initial impressions, as these first scents often align with the flavours.

Step 7: The Tasting

Dip your spoon into the cup and take a small slurp. Let the coffee spread across your palate, exploring the different taste zones. Note the body – is it light, medium, or full? Pay attention to acidity, sweetness, bitterness, and any unique notes like chocolate, citrus, or spices.

Step 8: Scoring and Reflecting

Score each coffee on various attributes, perhaps using a scale of 1 to 10. Consider its complexity, balance, and aftertaste. Reflect on how each coffee makes you feel – does it transport you to a specific place or memory?

Step 9: Comparing and Contrasting

After evaluating each coffee individually, take a moment to compare and contrast them. How do their flavours and aromas differ? Which ones resonate most with your palate?

Step 10: Discussion and Sharing
