Overview

A lush, juicy Pink Bourbon, bright and tropical. 

For the Camionetta Anoxic processing: The harvest is first washed to remove debris, and to separate low density cherries which float, from the higher quality, denser fruit. The cherries are placed in plastic bags to reduce oxidation post picking, and then transported from Huila to a dedicated processing station, Finca Jamaica in Caldas.

This process takes approximately 72 hours due to the distance, and interestingly the journey acts as a fermentation resting period that allows the cherries to ferment in an anaerobic environment. On arrival at Jamaica, the cherries are washed again and dried on dedicated raised beds until they reach 20 - 25% humidity, before being finished in a parchment powered deep bed mechanical dryer which stays at a consistent 40 degrees until the drying is complete.

Origin

Carlos Martínez, 51 years old, is the first coffee grower in his family. Tired of living amid the armed conflict on the border with Ecuador, he decided to enter the world of coffee. In only 2022, together with his family, he decided to embark on the apprenticeship of specialty coffees, since coffee growing has conquered his heart.

At present, on his farm, he has different varieties of coffee, among which are Caturra, Pink Bourbon, Colombia, and Catimor. Their production processes are varied, employing different fermentation methods.

Carlos Martinez and his family are committed to the search for excellence in coffee production. Through their dedication and constant learning, they hope to offer high-quality coffee.

Soo different, exciting

Try something totally different, this roast dances across your taste buds. Super tangy, almost passionfruit like. I found that although it was a little too tangy for straight espresso, it worked really well with milk as a flat white (it balanced out the fruity flavour really nicely)
